Chef's Secrets: Neil Jones' Recipes


Bruschetta
By substituting toasted pizza crust for the baguette bread, this recipe becomes a quick and easy way to use leftover dough. Excellent flavor. A crowd favorite at Pizza Expo 2009.
Ingredients
4 Cups- San Benito PERFECTO Ground Peeled Tomatoes
6 Cups- San Benito Petite Diced Tomatoes
1 Bunch- Fresh Basil, Chopped
2 Tbsp- Garlic, Chopped
1 tsp- Salt

1/4 cup- Extra Virgin Olive Oil
4 Loaves- Baguette Bread

Drain petite diced tomatoes. Mix diced and ground tomato products together. Add all remaining ingredients except olive oil. Mix well. Slice baguette bread into 1/2" slices and toast. Drizzle olive oil onto bread. Spoon tomato mixture on top of oil and serve immediately.
